Champignons cultivés

Les variétés de champignons cultivés sont aussi nombreuses que délicieuses. Leurs noms mystérieux invitent à de savoureuses promenades gastronomiques.

Le champignon de Paris. C’est la variété la plus cultivée au monde. On le reconnaît facilement à sa peau lisse de couleur uniforme, blanche ou blonde. Ses lamelles sont invisibles. Son chapeau est souple et soyeux. Plus ce dernier est ouvert et plus son arôme est intense. Lorsqu’il mesure de 15 à 20 centimètres de diamètre, on surnomme le champignon « galipette » - le chapeau est si lourd qu’il penche. Le champignon de Paris est tendre, goûteux et se cuisine très facilement.

Le shiitake. Originaire de Chine et du Japon, c’est le deuxième champignon le plus cultivé au monde. On l’appelle aussi lentin de chêne, ou champignon parfumé. Son épais chapeau brun-roux est charnu. Sa chair est douce et spongieuse et sa saveur est délicate. Il doit être consommé exclusivement cuit.

Le pied-bleu. Un chapeau, des lamelles et un pied de couleur lilas à bleu violacé sont les signes distinctifs du tricholome pied-bleu. Le pied-bleu offre une chair épaisse, tendre dans le chapeau et fibreuse dans le pied. L'odeur fruitée et anisée est caractéristique du pied-bleu.

Les champignons cultivés - Le pleurote Le pleurote. Le pleurote est le troisième champignon le plus cultivé au monde. Il existe une quarantaine d'espèces dont la plus répandue est celle en forme de coquille d'huître, ce qui lui vaut, en anglais, le nom d’oyster mushroom, ou le curieux surnom de champignon huître. Sa chair est ferme et sa saveur de sous-bois est douce et parfumée.
